Yikes! Gas in my small city just went over $6.00 per gallon! Per the news stations in Los Angles some stations are charging over $8.00 per gallon! I'll be driving only when needed.... 😖

I live in California, and yeah, gas prices are brutal. I really don't understand why the Powers-That-Be aren't lowering the speed limit to 55 mph to conserve fuel, like they did in previous gas price crises. I'm retired now, but I can only assume my former co-workers are carpooling and ride-sharing and taking the bus like they did the last couple of times.
It's sure weird to be in my sixties and hesitating and/or deferring shopping in neighboring towns because of how much it'll cost to drive there and back. Not quite how I pictured my retirement! (Though that was supposed to occur about five years later than the pandemic caused it to be. 🤷)
People act like this is unique -- and certainly the dollar amount is the highest I can recall -- but it's really not. And in the past, working remotely wasn't an option for basically anyone, so in that sense, we're lucky.
The last half-dozen years has changed America profoundly and no doubt in some ways quite possibly permanently for the worse, but maybe this latest gas crisis will get us farther from fossil fuels and more into transportation that's better for the environment. It would be nice to see something positive again.

doubtful as I just read an article about legislation being put forward by legislators at both state & federal levels that penalizes companies that are saying they won't use fossil fuels, trying to go responsible. Basically, banning anything they can control, like the pension funds for state workers, retirees, etc (and yep, I'm one of those!) who will be forbidden to purchase stock in companies that are being socially responsible in regards to energy. Yep, can we tell who's been bought out by the fossil fuel companies?
when the prices started going up, I saw discussion of going back to the 55 mph speed limit on the interstates, etc; quickly howled down. Americans aren't willing to give up what they perceive as their liberties. Someone find for me where in the Constitution it says that you have the right...(for whatever folks keep claiming "they" can't make "me"...)

Now I've heard that within the next couple of months, per the FDA, that there mayl be shortage of eggs and the price could possibly go up to $1.00 per egg or $12.00 per dozen. Something has gotta give...

All my prices are in US dollars. Hearing the same thing about eggs for us. The brand we buy is already costing us $11, there are cheaper caged no name brands available so there are other options at the moment. Read that up in Queensland somewhere ice burg lettuce is going for the equivalent of $17, inflation and flooding has had a big impact on fresh food prices. For us locally its about $7.50. Cheaper to buy junk food to survive rather than fresh food. And I am not even going to mention the price of petrol .

I bought a 24 case of eggs at Costco last week for $4.99, dirt cheap compared to the grocery store. Ice berg lettuce, which I use to pay $0.99 for is now close to $3.00. Sounds horrible but compared to your prices we're not doing so bad.

Bird Flu has struck again & they're having to kill off huge flocks again; didn't we see this around the beginning or a bit before of the pandemic and the egg prices went up badly then? I seem to remember that during WWI, the govt. urged meatless & wheatless days. Don't think they talked eggless...but maybe we'd better be investigating recipes that don't use eggs (great binder in baking), etc. Use an egg for binder in meatloaf...wonder what works instead...not water, maybe milk? And hope that the price, etc doesn't happen!

I'm not sold on the whole electric car thing. Number one, here in California we've been warned we'll be more than likely have brown outs and black outs, no telling how long they'd last, due to an electricity shortage. How will people charge their cars? If people who have electric cars go on trips are there enough charging stations to accommodate the needs of everybody? We're seriously thinking about getting a generator as out here in the country we're on a well run by electricity. No well, no water or toilets. I'm not sure I'd want to be forced to go only electric.
I'd rather have a choice.

Well, hybrid cars get good gas mileage, and so do small cars. If Americans who don't really need that gas-guzzling huge monster truck and/or SUV switch to something that gets two or three, or more, times the mileage, that'll help. I admit I wish I'd bought the small sedan instead of the small SUV. I would be getting more than twice the mpg. I agree that there are currently a lot of issues with all-electric vehicles that still need to be resolved. Plentiful charging stations in safe, convenient locations is another problem.

I'll admit, I'd probably go for a hybrid if I bought another car (the current one is only 8 yrs old & since I usually go 14 yrs between purchases--be a while...and will I still be driving by then...?) I bought a CRV last time because it made it easier to get out of the car than the previous sedan. But it was easier to get into the sedan...and I miss that at times! But yes, charging stations are a concern, plus having to install one in my garage as well. Can't just use the standard outlet that's already out there... I doubt we'd be forced to go electric for a very long time but options are nice.
I think it's a good idea to get a generator esp. since they said the other day the water in the Colorado River is getting low enough that it may not be able to generate electricity like normal soon which causes even more problems for the western states.
I am severely allergic to eggs and have had to learn how to cook without them. If anybody seriously needs to know what to use as a sub, just tag me with your question.
I watched The Kitchen this morning on HGTV & they were looking at cooking trends. Started with Air Fryers; Katie actually said if you don't have an air fryer, you could use the convection option in your oven. My mind said what convection option? But one of the trends they looked at as well were the plant based foods; I didn't realize how many they were! Had plant based crab cakes--Sunny was happy, she's allergic to crab! She did say they were good but needed a bit more crab taste. But any way, they were talking about a variety of things, made with a wide variety of plant proteins. I started thinking about the foods in JD Robb's In Death series where so much of it is "fake" or soybean based, etc & wow, when they get actual cow, or pig or egg (usually when having a working breakfast in Eve's home office)--in fact I remember some laughter about cluck cluck, etc. On this mornings; they had what looked like slices of beet on a sandwich, said they were plant-based pepperoni. I was with Jeff M; don't you go interfering with my pepperoni!
I also thought of this conversation as Katie was using a flour, egg wash, bread crumbs breading process & I wondered what would replace the eggs in that? Agreads, what do you use for this process? Alex G. made stuffed portobello mushroom burgers & they did look good, but sure seemed like a lot of work. She didn't use flour for the breading process, just eggs & bread crumbs.

For breading things such as dipping in egg first then flour or bread crumbs, I usually replace the egg wash with buttermilk. Greek yogurt can also work. For frying chicken, dijon mustard is great although I have to make sure the mustard is egg free. The dijon spices add a nice flavor to the chicken. .
