Bruin Girl - I tried SamanthaK's cookies and they were really good - I added peanut butter and chocolate chips to mine.
When you're buying oatmeal, you might want to try large flake, rather than quick cook. Much less mushy no matter how you use it.
You could also try Muesli. Basically it's yogurt, fruit and oats (and/or other grains). There is a quick variety and an overnight variety. Recipe's for both are very plentiful. Because it's something you would make yourself, you completely control all the ingredients. Here is one I found for an overnight variety. The quick type would be less mushy.
Ingredients 2 cups/150g rolled or quick oats 1¾ cups/420ml milk ¼ cup/60ml apple juice 3 tablespoons lemon juice 1 apple, cored and grated with the peel 1-2 tablespoons honey 1½ cups/375g plain yogurt A dash of cinnamon (optional) Toppings : your favorite fresh and/or dried fruit, nuts, toasted coconut, etc. Our favorites: blueberries, strawberries, raisins and hazelnuts Instructions Combine oats, milk, apple juice and lemon juice and let sit overnight in the refrigerator. In the morning add the grated apple, honey (to taste), yogurt, and cinnamon, if desired, and mix well. Top with your favorite fruits and nuts.
Bruin Girl this is something we have in common. I also cannot stand mushy food in general, but oatmeal is a staple breakfast meal, and I have tried it in many variations to no avail. The only way I can have oat is in granola, here is the recipe I follow when I make them myself.Everyday granola

I really like the Cinnabon flavor Cream of Wheat. The only trouble is that when I eat it, I start thinking about wanting a real Cinnabon cinnamon roll. When I lived in Virginia, the Cinnabon in Richmond always had these absolutely luscious chocolate and cinnamon rolls that they only served around Christmas and were my absolute favorite. Unfortunately, where I now live, the closest Cinnabon is more than sixty miles away from my house.

I'm with you. Oatmeal - yuk. The only way I can come at oats is in ANZAC biscuits (what you Americans call cookies are biscuits to us, biccies... your biscuits are more like our scones). I love oatmeal. I buy the regular packets of it. When I make it I add one teaspoon of brown sugar, flax seeds and a banana. My go-to breakfast about twice a week.
This old thread caught my eye and had a good chuckle reading some of the old posts. I love oatmeal so much I could survive on it alone. I usually eat the rolled oat variety rather than instant which tends to be too mushy. Like a bit of chew to my oats. I zap them in the microwave with full fat milk and no other extras.

I've actually had oatmeal for dinner when my husband had already eaten or wasn't hungry an I was too lazy to do much cooking. I really like oatmeal in oatmeal cookies!
One of my favorite easy dinners is oats cooked in milk with brown sugar, flax seed, pear slices, and honey. I also make it with brown sugar, cinnamon, applesauce, flax seed and honey.
I use oats instead of bread crumbs in a lot of recipes. I also make oatmeal and golden raisin cookies substituting cream cheese for the egg. My husband loves them.

When mixing stuff up for meatloaf I sometimes use oatmeal instead of bread crumbs. Works just as well an and tastes good. I'll be making my husband some sugar free oatmeal cookies later this week.
